Extra Notes
WINEMAKING METHOD:
Charmat-Martinotti Method: The second fermentation takes place in pressurized stainless steel tanks (autoclave) at controlled temperature and pressure, rather than in individual bottles. This method preserves the fresh, fruity character of the grapes and creates fine, persistent bubbles.
Process:
Primary fermentation in temperature-controlled stainless steel tanks
A small percentage of red wine or maceration with red grape skins to achieve the rosé colour
Secondary fermentation in autoclave for approximately 30-90 days
Careful temperature control throughout to preserve aromatics
Filtration and bottling under pressure
ABOUT ZANOTTO:
The Zanotto winery is located in Montebelluna, in the province of Treviso, in the heart of the Conegliano-Valdobbiadene Prosecco area—a UNESCO World Heritage site. Founded by Riccardo Zanotto, who began commercialising wines in 2009, the estate embodies a precise vision of winemaking rooted in tradition and territorial expression.
Philosophy: Riccardo believes great wine is born in the vineyard, meticulously caring for the agronomic aspects. The estate comprises just 7 hectares of vineyards, supplemented by grapes from trusted local growers who share a sustainable, genuine vision. Each bottle contains Riccardo’s personal idea of wine—conveying the stories, aromas, and flavours that made him fall in love with his land.
Production Style: Zanotto’s production is divided into two categories: Charmat-method sparkling wines (like this Osè Rosé) and bottle-fermented wines made using the Ancestral Method (“Col Fondo”). Beyond typology, all interpretations reflect a strong personality and deep territorial connection.
TASTING NOTES:
Appearance: Delicate pale pink to salmon-rose colour with fine, persistent bubbles (perlage) and a lively mousse
Nose: Fresh and fruity with aromas of red berries—strawberry, raspberry, and red currant. Delicate floral notes with hints of citrus and subtle stone fruit. Clean and inviting.
Palate: Vibrant and refreshing with bright red fruit flavours leading—sweet berries, fresh cherries, and red apple. Crisp, cleansing acidity balances the fruit character. Light to medium-bodied with a creamy mouthfeel from the fine bubbles. The Brut style keeps it dry and elegant, with just enough residual sugar to enhance the fruit without adding sweetness.
Finish: Clean, refreshing, and persistent with lingering red fruit notes and zesty acidity. Plenty of froth and a lively, easy-drinking character.
CHARACTERISTICS:
Freshness: High—crisp and lively
Body: Light to medium
Acidity: Bright and balanced
Sweetness: Dry (Brut)—just a touch of softness

THE TERRITORY:
Montebelluna sits in the heart of Prosecco country, an area of UNESCO World Heritage hills with high winemaking tradition. The territory is predominantly hilly, where traditional vineyard work continues by hand due to the challenging terrain. The climate and soils of Treviso contribute to wines with bright acidity, fresh fruit character, and elegant minerality.
AGEING POTENTIAL: Best enjoyed young and fresh, within 1-2 years of release to appreciate the vibrant fruit character
PACKAGING: Traditional sparkling wine bottle with cork and wire cage (muselet)
WHY THIS WINE IS EXCEPTIONAL:
Zanotto represents the artisanal side of Veneto’s sparkling wine production—small-scale, personality-driven wines that showcase territorial character rather than industrial uniformity. As an artisan producer in Prosecco country, Zanotto brings meticulous attention to detail and genuine passion to every bottle. The Osè Rosé captures the essence of Italian conviviality and joy—fresh, approachable, and made for sharing.
VERSATILITY:
One of the great strengths of Italian rosé spumante is its incredible versatility. The combination of lively bubbles, crisp acidity, and a range of fruit flavours brings a touch of magic to any table. Perfect for everything from casual gatherings to more formal celebrations, this wine bridges Veneto’s winemaking heritage with a modern, accessible style.
STYLE NOTES:
The name “Osè” (pronounced “oh-ZEH”) suggests daring or boldness—fitting for a rosé that combines traditional Venetian winemaking with contemporary appeal. Made in the fresh, fruit-forward style that defines modern Italian sparkling rosé, it offers easy drinkability with enough character to stand out.
OCCASION:
Perfect for summer entertaining, garden parties, brunch, aperitivo hour, celebrations, or any time you want something fresh, lively, and uncomplicated. The kind of wine that encourages laughter, conversation, and la dolce vita.
