Hyde Farm Estate
Our deli is set in the midst of Hyde Farm Estate, a historic area in Balham, that in Medieval times was farmland as far as the eye could see. It was redeveloped between 1896 and 1916, and transformed into a charming residential area with a strong sense of heritage. Today, Hyde Farm is an integral part of the community, sharing its values, and bringing natural goodness to its people every day.
OUR STORY
The story of Hyde Farm started long before we opened our doors – in Puglia. Ivan’s grandfather Antonio Ratta was a shepherd, cheesemaker, and guardian of the land. Meanwhile his other grandfather, Emanuele “Tore” Raganato, was a farmer, winemaker, and butcher who believed in working with nature, not against it. These men didn’t just make food — they lived it. And the lessons Ivan learned from them continued to guide him.
Growing up in his father’s bar in Copertino, Ivan learned the craft of coffee and the importance of customer service. Later, after years of working across Italy’s top food destinations — from Milan to Rimini — Ivan took his skills to London, spending a decade refining his experience in the food and beverage industry.
But his ambition was never just to open a deli. It was to bring the authentic flavours of Italy to London, sourced directly from small artisan producers who care for the land in the same way his family had.
In 2019, Ivan and his partner Alicja opened Hyde Farm in Balham. Since then, they’ve stayed true to their roots — sharing real Italian goodness, made with heart, tradition, and respect for the land it comes from.

GROWN IN ITALY
Hyde Farm is based in south London, but we were born and bred in the south of Italy. So as you’d guess, we’re big on genuine ingredients. It’s what turns a simple dish into a sublime experience. So, whether the food we bring to your table is from Italy or elsewhere, we guarantee it always comes with our seal of approval. For us quality isn’t optional. It’s a promise.
SOURCING FROM PUGLIA, AND BEYOND
Our shelves are heaving with some of the finest tastes Puglia has to offer. To find them we travel from Gargano to Gallipoli and beyond. Tasting, testing and talking to local producers whose families’ roots run deep in the land. But for Ivan this is more than just about importing existing tastes and flavours, it’s about collaborating on new ones. To do this he works directly with local producers to co-develop a range of products specifically for the Hyde Farm collection. All so we can stock the authentic, homegrown delights our customers love.
OUR PRODUCTS
At Hyde Farm, we work closely with small producers in Italy and beyond who share our love of tradition, quality and good taste. Together, we bring a little bit of Puglian sunshine (and plenty of craft) to our corner of Balham — from velvety olive oils to freshly roasted coffee.

Puglia is a place that’s overflowing with good things. Natural beauty, baroque architecture, endless charm and a deep culinary heritage.
Often known as the granary of Italy and the homeland of olive oil, Puglia offers a dizzying variety of artisanal food and wine. From hand-rolled orecchiette and sun-dried tomatoes, to traditional taralli, and robust wines like Primitivo di Manduria and Negroamaro.
Here, the Mediterranean diet is a way of life. A place where slow food communities nurture exceptional products like the black heirloom chickpeas of Acquaviva, prized worldwide for their unique flavor and texture.
At Hyde Farm our mission is to we bring these treasures of Puglia to your table. Working directly with small local producers, to develop products that capture the authentic taste and spirit of southern Italy.

Our deli takes pride in its strong commitment to social responsibility. From offering recyclable coffee cups, water bottles, and tote bags to sponsoring a local football team, we believe in rolling up our sleeves and doing our bit. But the cause closest to our hearts is our ongoing support for Muscular Dystrophy UK. Through fundraising events — including Alicja’s incredible climb up Kilimanjaro and her run in a charity marathon — we’re proud to make a positive difference.
