About This Product
Don Fabio Negroamaro 2010 comes from 60-year-old vines cultivated using the traditional Apulian sapling system. Hand-harvested and carefully selected, the wine ages 24 months in underground tanks and 12 months in barriques before bottling. With a maximum of 2,900 bottles produced annually, it is one of the estate’s most limited and distinctive releases.

The “Meditation” Wine: A wine of this age and scarcity (only 2,900 bottles produced) is often best enjoyed on its own or with very simple accompaniments. It is a “meditation wine,” meant to be sipped slowly as it evolves in the glass.
Game & Truffles: If pairing with food, choose dishes with earthy depth. Pheasant with wild mushrooms, venison with a blackberry reduction, or any dish featuring black truffles will harmonise with the wine’s aged complexity.
The Connoisseur’s Cheese Board: Pair with the oldest cheeses in your larder—a 48-month aged Parmigiano Reggiano or a very mature, crumbly Pecorino. The crystalline texture of the cheese is a perfect foil for the velvety wine.
Preparation Ritual: This vintage requires careful handling. Decant for at least 2 hours to allow the “old-vine” aromatics to awaken. Given its age, use a fine-mesh filter when decanting to catch any natural sediment that may have formed.
Service Temperature: Best enjoyed at a steady 18–20°C.
