Preparation: This sauce is ready to use and best enjoyed when its creamy texture is preserved. Do not boil. * Method: For a perfect pasta dish, drain your pasta (short shapes like Rummo Penne or Mezzi Rigatoni work best) and toss it with the pesto in a warm bowl. The residual heat from the pasta will be enough to warm the ricotta and release the aroma of the peppers. If you prefer a smoother sauce, add a spoonful of the pasta cooking water.
