Picked when golden and sun-sweet, these yellow tomatoes are grown in the same distinctive “terra rossa” soil as their red cousins, but offer a gentler profile. Lower in acidity and naturally fruity, they create a passata that suits delicate seafood sauces, risotto, light pasta dishes and creamy preparations. Preparation: Yellow tomatoes are more delicate than red varieties. To preserve their “gentler profile” and bright golden colour, use a shorter cooking time and avoid heavy browning of base ingredients.
Method: Gently warm in a pan for 5–8 minutes over a low-to-medium heat. Sauté mild aromatics like shallots or white onion rather than garlic to ensure the subtle, fruity notes of the yellow tomato remain the star of the dish.
