Serving Suggestions & Cooking Instructions
Preparation: This sauce is a “ready-to-toss” preparation. To keep the vibrant, earthy flavour of the turnip tops intact, avoid prolonged cooking or high temperatures.
Method: While your pasta is boiling, place the sauce in a large warmed bowl. When the pasta is ready, transfer it directly into the bowl with a small amount of the starchy cooking water. Stir vigorously to emulsify the sauce into a silky coating. For a more traditional touch, you can gently warm the sauce in a pan with a little extra virgin olive oil and a single salted anchovy fillet until the anchovy melts.
The Puglian Icon: For the most authentic experience, serve this with Orecchiette (“little ears”). The concave shape of the pasta is designed specifically to scoop up this thick, slightly bitter cream.
Classic Accompaniments: Finish the dish with a generous sprinkle of toasted breadcrumbs (mollica) or a grating of salty Pecorino. Many in Puglia also enjoy this served alongside grilled Italian sausage or sautéed pancetta.
