About This Product
Collected from Norway’s heather moorlands during late-summer bloom, this monofloral honey delivers woody, floral aroma and deep, almost malty taste with subtle tannic notes. Naturally gelatinous due to high protein content, it’s produced by a fifth-generation family apiary. Ideal with strong cheeses, porridge, whisky, yoghurt, game, or bakes needing bold honey character.
✓Monofloral heather variety
✓Naturally thick gel texture
✓Robust, floral, malty notes
Serving Suggestions & Cooking Instructions
Pure & Unprocessed: As this is a 100% natural, raw product, it may undergo natural crystallisation over time. This is a sign of purity and does not affect the quality.
Restoring Texture: If the honey sets or becomes grainy, simply place the jar in a bowl of warm water (not boiling) for a few minutes to return it to its smooth, liquid state.
Storage: Store in a cool, dry place away from direct sunlight. There is no need to refrigerate.
The Nordic Breakfast: Drizzle over a bowl of thick Greek yoghurt or porridge topped with fresh forest fruits. The “aromatic, buttery taste” perfectly complements the tartness of berries and the creaminess of oats.
Artisan Cheese Pairing: This honey is an exceptional partner for a cheese board. Pair it with a salty Blue Stilton, a mature Manchego, or a creamy Goat’s Cheese. The forest notes of blueberry and raspberry forage add a sophisticated floral contrast to the savoury cheese.
Natural Sweetener: Use it to sweeten herbal teas or as a refined alternative to sugar in baking. It works particularly well in honey cakes, granola, or as a glaze for roasted root vegetables like parsnips and carrots.
Gourmet Toast: Spread simply over warm, buttered sourdough or rye bread to let the complex, wild wildflower flavours take centre stage.
Storage Instructions
Store at room temperature, out of direct sunlight. Honey crystallises. To return to liquid form – stand jar in warm water.
