Serving Suggestions & Cooking Instructions
Preparation: To preserve the bright green colour and the delicate aroma of the fresh Italian basil, never heat this pesto in a pan or microwave. High temperatures will cause the basil to oxidise and turn bitter.
Method: Stir the pesto into your pasta at room temperature once it has been drained. Always reserve 2–3 tablespoons of the hot pasta cooking water; adding this to the pesto creates a silky, pourable consistency that coats every strand perfectly.
The Ligurian Tradition: For the most authentic experience, serve with Rummo Trofie or Linguine, boiled together with small cubes of potato and trimmed green beans—this is the classic “Pesto alla Genovese” preparation.
