Extra Notes
THE CHINOTTO FRUIT – ITALY’S RARE CITRUS:
What is Chinotto?
A chinotto (Citrus aurantium) is a ping-pong ball-sized citrus fruit that grows on an attractive, white-flowering tree often used as an ornamental, shaped similar to typical oranges, but its taste is more tart and sour, and their smell is intense.
Imported by a Ligurian sailor in the 1500s from China (hence its name), it once spread throughout the Mediterranean basin as far as Turkey and Syria, but now chinotto is confined to Calabria, Sicily, Tuscany, sporadic patches along the French coast, and most notably Liguria.
Mount Etna Magic:
Sanpellegrino Chinotto is made with chinotto grown between Taormina and Giardini Naxos, on the volcanic slopes of Sicily’s Mount Etna —the same fertile volcanic soil that makes Sicilian citrus legendary. The volcanic terroir contributes to chinotto’s intense, complex character.
THE SECRET RECIPE – 20 HERBS:
Crafted from extracts of carefully selected chinotto oranges from Sicily and a delicious mix of 20 herbs, the exact formula remains Sanpellegrino’s secret since 1958. The 20 herbs create layers of complexity—woody, aromatic, herbal notes that distinguish Chinotto from any other soft drink.
The result: Balance between sweet and bitter—intense notes of candied citrus and a pleasant bitter finish given by woody notes that linger on the palate.
FLAVOUR PROFILE – BITTERSWEET COMPLEXITY:
Tasting Notes:
Appearance: Dark in color, similar to cola —deep amber-brown
Nose: Intense citrus with herbal, woody aromatics, candied orange peel
Palate: Intense notes of candied citrus, balance between sweet and bitter, citrusy and bitter notes with the perfect sweet touch Amazon
Finish: Pleasant bitter finish given by woody notes that linger on the palate
The Experience:
Not as sweet as cola, having a bittersweet taste. Sweet with a side of bitterness and an aromatic aftertaste of something undefinable—that chinotto quality. Bitterish and fruity, smooth on the palate, delicately balanced.
This is sophisticated adult soda—complex, mysterious, an acquired taste that rewards adventurous palates. Not for everyone. Perfect for those who get it.
Food Pairing:
Try Chinotto with Italian dishes such as puntarelle with anchovies, or a fish fry. The bittersweet character pairs with:
Fried foods (calamari, fish fry, arancini—cuts richness)
Bitter greens (puntarelle, radicchio, cicoria)
Anchovy-based dishes (bagna cauda, Caesar salad)
Rich pasta (carbonara, amatriciana)
Grilled meats (steak, sausage)
Strong cheeses (aged pecorino, Gorgonzola)
Dark chocolate (perfect pairing)
As a Mixer:
With Amaro (for extra bittersweet depth)
With rum or whiskey (adult cola alternative)
Chinotto Spritz (+ Aperol + soda)
With vodka (sophisticated mixer)
