Extra Notes
THE CAMPARI LEGEND – SINCE 1860:
The Inventor: Gaspare Campari invented this iconic liqueur in 1860 in Novara, Italy (Piedmont region, west of Milan), creating what would become the world’s most famous bitter aperitif.
First Production Plant: In 1904, Campari’s first production plant opened in Sesto San Giovanni, near Milan, where it’s still produced today.
Global Expansion: Under the direction of Davide Campari (Gaspare’s son), the company began exporting—first to Nice on the French Riviera, then overseas. By the 1920s, Campari was an international phenomenon.
The Secret Recipe: The formula has remained secret and true to the original since 1860, making Campari an Italian icon around the world. Only a select few know the complete recipe.
The Iconic Colour: Originally colored with carmine dye (made from crushed cochineal insects), Campari discontinued this in 2006, switching to artificial colorants. The vibrant red remains its signature.
THE SECRET RECIPE – 60+ INGREDIENTS:
The exact ingredients are a jealously guarded secret. Reports suggest 60-68 different ingredients are used.
Known Ingredients:
Bitter orange peel – Dominant citrus character
Chinotto (Italian citrus fruit) – Bitter, aromatic
Cascarilla (bark) – Bitter, aromatic
Quinine (cinchona bark) – Bitter backbone
Rhubarb – Earthy bitterness
Ginseng – Herbal complexity
Herbs and aromatic plants – Secret selection
Fruits – Various including citrus
Production: Ingredients macerated in mixture of water and alcohol. The liquid is then sweetened and colored to create the famous red bittersweet aperitif.
APPEARANCE: Vibrant, brilliant ruby red / crimson hue – the most recognizable color in the spirits world. Dark, intense, instantly identifiable.
TASTING NOTES:
Nose: Intense and aromatic. Bittersweet orange dominates. Inviting floral aromas. Herbal complexity. Hints of cherry, spice, citrus zest.
Palate: Complex, bittersweet, and intense. Rich layering of carefully balanced flavors:
Bittersweet orange citrus (dominant)
Huge bitterness oscillating with big sweetness
Blood orange, sherbet
Quinine, intensely bitter dried herbs
Peppery spice, zesty orange rind
Cherry, mint, tart berry
Earthy spice, cinnamon, clove
Woodiness that’s wonderfully moreish
Mulled spice complexity
Finish: Long, aromatic, citrussy. Bitter and sweet oscillate. Herbal and warming. The flavors linger beautifully.
CHARACTER: An acquired taste—but once acquired, a friend for life. The first sip can seem almost too bitter for some, but there’s something that pulls you back. Complex herb and bittersweet orange tones lead, with inviting florals and lasting woodiness creating a multilayered drinking experience. Campari is more intense, more bitter, and stronger than Aperol (25% vs 11% ABV), making it essential for spirit-forward cocktails.
CLASSIC COCKTAILS – THE UNFORGETTABLES:
Negroni (The Icon): Equal parts (30ml each): gin, Campari, sweet vermouth. Stir with ice, strain over ice in rocks glass. Orange peel garnish. One of the IBA’s “Unforgettables” with Campari named specifically.
Americano: Equal parts Campari and sweet vermouth, top with soda water. Build over ice, orange slice garnish. Another IBA “Unforgettable.”
Negroni Sbagliato (The Mistake): Equal parts Campari, sweet vermouth, sparkling wine (Prosecco). “Wrong” Negroni—equally brilliant.
Milano-Torino (Mi-To): Equal parts Campari (Milan) and sweet vermouth (Turin). Simple, classic, pure Italian.
Garibaldi / Campari Orange: ¼ Campari, ¾ fresh orange juice. Gentler introduction to Campari’s bitterness.
Campari Spritz: Campari, Prosecco, soda water. Build in wine glass with ice, orange garnish. More intense than Aperol Spritz.
Campari & Tonic: ⅓ Campari, ⅔ tonic water, ice, lime wedge. Refreshing bitter-sweet long drink.
Jungle Bird (Tiki Classic): Rum, Campari, pineapple juice, lime, simple syrup. Tropical meets bitter.
Boulevardier: Bourbon or rye, Campari, sweet vermouth. The whiskey Negroni.
