Extra Notes
THE STORY – CAFFO 1915:
Giuseppe Caffo created this amaro in 1915 as a medicinal tonic using an ancient Calabrian recipe. Over a century later, the Caffo family (now 4th generation—Giuseppe’s grandson and great-grandson Sebastiano) continues the tradition with passion and dedication to the art of liqueur-making.
29 CALABRIAN BOTANICALS – SECRET RECIPE:
The exact formula remains a family secret. Known ingredients include:
Liquorice, mint, anise (the dominant trio)
Chamomile, orange, orange blossom, tangerine
Citrus zest, juniper, ginger, laurel
Cardamom, saffron, cinchona, gentian
Angelica, sage, cloves, cinnamon, hyssop, thyme
Plus additional secret botanicals from Calabria
TRADITIONAL PRODUCTION:
Each botanical is harvested at peak ripeness throughout the year—respecting natural seasonal cycles. Immediate maceration after harvesting (often same-day) captures maximum freshness and aroma. Each ingredient is macerated and distilled separately in neutral grain alcohol, then married together in neutral oak barrels using a solera system.
APPEARANCE:
Warm amber color with golden hues—naturally derived from herbs and aging.
TASTING NOTES:
At Room Temperature:
Fresh mint and intense liquorice dominate. Orange, citrus zest, and chamomile delicacy. Bittersweet balance—sweet oranges upfront, herbal complexity mid-palate, warming spices (ginger, cinnamon, cardamom). Bitter gentian backbone balanced by natural sweetness. Long, aromatic finish.
At -20°C (The Calabrian Way):
Transformative. Syrupy-viscous texture, explosively aromatic. Mint, anise, and liquorice emerge with crystal-clear intensity. Herbs create a fresh, seductive sensory experience. Fuller body, more intense flavors. This is how Calabrians have enjoyed it for generations—the ultimate expression.
CHARACTER:
Gentle and aromatic amaro—more approachable than aggressive bitters like Fernet, yet more complex than sweet liqueurs. Perfect bittersweet balance with unmistakable Calabrian character. The 29 botanicals create layers that unfold differently at various temperatures.
AS FEATURED ON BOTTLE:
“Frutto di un’antica ricetta calabrese… racchiude in sé i principi di tante benefiche erbe, fiori e frutti che gli conferiscono il suo colore caldo e ambrato ed il suo inconfondibile gusto gentile e aromatico, da sempre espressione sincera di genuinità.”
(Fruit of an ancient Calabrian recipe… contains the essence of many beneficial herbs, flowers, and fruits giving it warm amber color and unmistakable gentle, aromatic taste—always a sincere expression of genuineness.)
