Prepare the Water and Guanciale
Put a large pot of salted water on the hob to boil for cooking the pasta. Whilst waiting, remove the rind from the guanciale and slice it first into strips, then cut into batons approximately 1cm thick. Set the rind aside for use in other recipes if desired.

Cook the Guanciale
Place the guanciale pieces in a non-stick frying pan over medium-high heat. Cook for approximately 10 minutes, stirring occasionally, until the fat has rendered and the guanciale is golden and crispy. Take care not to burn it, as this will create an overly strong, bitter flavour.

Cook the Spaghetti
Once the water is boiling rapidly, add the spaghetti and cook until al dente according to packet instructions.

Prepare the Egg and Cheese Mixture
Whilst the pasta cooks, place the egg yolks in a mixing bowl. Add the grated Pecorino Romano and a generous grinding of black pepper. Whisk together with a hand whisk until you achieve a smooth, creamy mixture.

Remove Guanciale and Prepare the Pan
When the guanciale is cooked, turn off the heat. Using a slotted spoon, transfer the guanciale to a small bowl, leaving the rendered fat in the pan. Set the guanciale aside.

Create the Base Sauce
Add one ladleful of pasta cooking water to the frying pan with the guanciale fat. Drain the al dente spaghetti and transfer it directly into the pan with the fat and pasta water. Toss briefly over low heat to coat the pasta and allow it to absorb the flavours.

Create the Carbonara Sauce
Remove the pan completely from the heat. Quickly pour the egg yolk and Pecorino mixture over the hot pasta. Toss vigorously and continuously to coat every strand, creating a silky, creamy sauce. If needed, add small amounts of pasta cooking water to achieve the desired creamy consistency.

Finish and Serve
Add the reserved crispy guanciale to the pasta and toss one final time. Serve immediately on warmed plates, garnished with additional grated Pecorino Romano and freshly ground black pepper.
Storage
Spaghetti alla Carbonara is best enjoyed immediately whilst hot and creamy. It does not store or reheat well, as the delicate egg-based sauce will separate and lose its silky texture.

✓ Avoid overcooking the guanciale, as excessive browning can create a bitter taste. Remove it from the heat whilst still golden to maintain its sweet, porky flavour.

✓ The key to avoiding scrambled eggs is adding the egg mixture only when the pan is off the heat. The residual heat from the pasta is sufficient to cook the eggs gently into a creamy sauce.
