The slow-cooked ragù, enriched with pancetta and finished with milk for tenderness, creates a sauce that’s both robust and refined. When layered with creamy béchamel and baked until bubbling and golden, the result is pure Italian comfort – perfect for Sunday family gatherings or special celebrations.

Begin the Ragù  

Start preparing the Bolognese ragù by placing the diced pancetta in a large, heavy-based saucepan over high heat. Cook without additional fat until the pancetta releases some of its own fat and begins to colour slightly.

Create the Soffritto 

Finely chop the celery, carrot, and onion. Add a drizzle of olive oil to the pan with the pancetta, followed by the chopped vegetables. Stir well with a wooden spoon and cook the soffritto for several minutes until the vegetables soften and become fragrant.

Brown the Beef 

Add the beef mince to the pan, breaking it up with your spoon as you add it to ensure it disperses evenly throughout the vegetables. Cook for 5 minutes, stirring occasionally, until the meat has browned.

Deglaze with Wine  

Pour in the red wine and stir well, allowing it to bubble and reduce for 5 minutes. This deglazing process lifts the flavourful browned bits from the bottom of the pan.

Add Tomato and Simmer  

Stir in the passata and season generously with salt and black pepper. Mix thoroughly to combine all ingredients. Reduce the heat to very low, cover with a lid, and simmer gently for at least 1½ hours, stirring occasionally. The ragù should reduce and thicken considerably.

Finish the Ragù  

Pour in the milk and stir well. Continue cooking for a further 5-10 minutes until the sauce achieves a smooth, creamy, homogeneous consistency. The ragù should be rich and thick, not watery.

Remove from the oven and allow the lasagne to rest for a few minutes to settle and firm up slightly. This makes portioning easier. Serve whilst still hot and steaming.

Storage

Lasagne alla Bolognese keeps excellently in the refrigerator for up to 1 day when covered tightly with cling film or stored in an airtight container. Reheat portions in the oven or microwave until piping hot throughout.

The Bolognese ragù can be prepared 2-3 days in advance and stored in the refrigerator until you’re ready to assemble the lasagne. Alternatively, the ragù freezes beautifully for up to 2 months – simply defrost thoroughly in the refrigerator before use.

Tips

For superior results, use fresh homemade pasta sheets if you have a pasta machine. If not, choose fresh lasagne sheets from the refrigerated section rather than dried pasta.
