THE PUGLIAN TRADITION – “CROCCANTE”: What Does “Croccante” Mean?

Literally “crispy” or “crunchy,” but in Puglian beer culture it means ghiacciata (ice-cold, frozen). This is THE traditional way to drink Raffo.Temperature: 3-5°C:

Not just cold—VERY cold. Almost freezing.

This isn’t carelessness; it’s tradition born from: Puglian Heat: Summer temperatures often exceed 35°C (95°F)

Maximum Refreshment: Ice-cold beer is pure relief

Flavour Profile: Raffo’s clean, dry character shines at very cold temperatures

Cultural Practice: “Fin dai tempi degli antichi pugliesi” (since the times of the ancient Pugliese)

How to Achieve “Croccante”:

Keep Raffo in the refrigerator at 3-5°C at all times. Some Pugliese even briefly freeze the bottle (careful—don’t let it actually freeze solid). Serve in a chilled glass. The colder, the better.
