About This Product
Hand-crafted in its original region for over 3,000 years, this exquisite Chinese green tea—known as White Monkey Paw—is made from whole leaves and curled, silvery buds. Clean, bright and remarkably delicate, it’s the opposite of harsh commercial green tea. Sustainably grown without herbicides or pesticides and traded directly with farmers, it can be infused at least twice, yielding even more flavour on the second steep. A portion of sales supports Rare Charity’s scholarship programmes.

Serving Suggestions & Cooking Instructions
Use 2g of tea per 150ml (5.5 fl oz) water
Water temperature: 70°C (158°F)—avoid boiling water which will make it bitter
Infusion time: 1-2 minutes, tasting regularly
Multiple infusions: Can be infused at least twice (often three times)—the second pot is even more delicious than the first
Cost per cup: Approximately £0.32 based on 2 infusions
Important: If you prefer stronger tea, add more leaf, don’t steep longer (this will make it bitter)
Storage Instructions
Store in the tin in a cool, dry place, away from heat and strong odours. Once opened, consume within three months for optimal freshness. Sealed product has 5-year best before date.

ORIGIN & SOURCING:
Sourced from the Fujian mountains of China, traditionally grown at elevations of 2,500-5,000 feet in the legendary Wuyi Mountains or Taimu Mountains—regions considered sacred in Chinese mythology. Direct Trade sourcing ensures the value stays with the farmers. Grown sustainably without herbicides or pesticides, fairly traded and directly sourced by Rare Tea Company.
THE NAME:
The tea gets its poetic name from the resemblance of its delicate, curled, white, downy buds to the curled paw of a little white monkey. The fine silvery “hair” on the leaves is a sign of early harvest quality and careful processing.
TRADITIONAL PAN-FIRING METHOD:
Within hours of plucking, fresh leaves are brought to large, very hot metal bowls. The leaves are gently rolled inside the hot pans so that every part is exposed to the heat—this rapid firing seals in the fresh green flavours while maintaining the whole leaf structure. This 3,000-year-old technique has been perfected over millennia and continues unchanged in the same place by master craftspeople.
