Serving Suggestions & Cooking Instructions
Cooking Time: 16–18 minutes.
Method: Start by toasting the rice in a pan with a little butter or olive oil for 2 minutes until the grains are hot and pearly. Deglaze with a splash of dry white wine. Gradually add hot stock, one ladle at a time, stirring constantly to release the starch. Continue this process for about 16–18 minutes. For a professional finish, remove from the heat and stir in cold butter and Parmesan (mantecatura), then cover and let rest for 2 minutes.
